Freezer Cooking Success!

My friend Chelsey and I got together on March 3rd to do some marathon freezer cooking. After it was over, we both realized that it honestly felt like we had ran a marathon, because we were dead beat tired, and she at 30 weeks pregnant, even more so! However, we felt so accomplished and are SO excited about the fact that we have all three meals covered for the next month or so!

Chelsey arrived at 8:45 a.m. and we didn't finish until 5:30 p.m. We were on our feet ALL day, except for a small lunch break. At the end of the day, both of our families got take- out because the thought of cooking ONE more thing was unbearable! haha!

In our freezer(s) right now:

30 Raspberry-Lemon muffins
8 Egg & Cheese sandwiches on English muffins
Too many to count - Raspberry Kiwi Smoothies
2 Fancy Tomato Soups
8 BBQ Chicken Wraps
2 Chicken Chow Mein
2 Chicken Fried Rice
2 Tilapia w/Spinach, Mushrooms, & Tomatoes
2 Bolognese Sauces to go with pasta (like Spaghetti)
2 Tilapia w/Garlic Roasted Tomatoes & Corn
2 Slow Cooker Chicken Pineapple Pepper Stew
2 White Chicken Chili
2 Bacon Broccoli Penne
2 Cauliflower Mac N Cheese
2 Cheeseburger Boat

Do you KNOW what a blessing all that food is?! And the fact that you basically just have to reheat the day of? I just get giddy with excitement at all the time that this has helped to save! I think I might actually accomplish decluttering our home this month...something that just keeps getting pushed further down the list!

Freezer Cooking is a HUGE time saver, but it is also a money saver, too. Together, between our two families, we spent $315.73 on all the ingredients to make our meals. This means that each of us only spent $157.86. Both of us have budgets of around $240/month.

Each meal is at least 4 servings and most are meals that you can serve over pasta or brown rice, or prepare a side dish along side it the day of to stretch everything even further. Since both of our families are pretty small, I am sure these meals will stretch out for both of us, too.

It was exciting, but also left me VERY glad that I won't have to do much cooking the rest of the month...because I am WORN out!
