Honey Baked Salmon

This was really easy and delicious! It took no time at all to make!

2 salmon fillets
1 T. honey
1 tsp. fresh lemon juice
2 T. olive oil
1/4 c. finely crushed pecans

Preheat oven to 450 degrees. Add oil to baking dish and heat the dish. When hot, remove and place the salmon fillet in. If you have skin, put the skin side down. Dust with finely crushed pecans and drizzle with honey and lemon juice over the entire fillet. You want it to run off some into the baking dish. Place the fish in the oven and cook for 15 minutes or until done.

I served this tonight for a quick dinner along with our favorite green bean recipe. For dessert, we had fresh strawberries and homemade whip cream! I'm so thankful for fresh fruits and veggies from our co-op!
